Gamp-Gamp's Lemon Cheesecake
You will need
- 336g cream cheese
- 2 eggs
- 1 tsp lemon juice
- 1 heaped tbsp lemon rind
- 2 tsp vanilla essence
- 14 digestives
- 42g melted butter
- 168g sugar
- 280g sour cream
- 42g sugar
- 1 tsp vanilla essence
Method
- Heat oven to 180°C.
- Crush the digestives, add the melted butter and mix. Press firmly onto the base and sides of a tin to make the base.
- Put base in oven for 5 minutes.
- Beat the eggs, then add the cream cheese, lemon juice and rind, 2 tsp vanilla, and 168g sugar.
- Pour mixture onto the base.
- Bake for 30 minutes (until the mixture is set), then cool for 5 minutes.
- Mix sour cream, 42g sugar, and 1 tsp vanilla, then pour on top
- Bake for 10 minutes, then turn the oven off and leave the cheesecake to cool in the over overnight.
